Wth late Spring and early Summer here you can find plenty of greens in the farmers markets. One in particular that has great flavor and excellent health benefits is Spinach. Here is a recipe for a salad that can be served cold or warm.
Organic Spinach Salad
4 Slices of Bacon (this can be found at the Farmers Market as well)
1/4 cup Cider Vinegar
2 tablespoons Olive Oil
2 teaspoons of Yellow Mustard Seeds
2 teaspoons minced fresh Parsley
1 teaspoon grated Onion
1 teaspoon Sugar
1/2 lb Organic Baby Spinach
2 Hard Boiled Eggs
Cook bacon in a skillet until crispy. Drain on paper towel and crumble when cool. In a small bowl whisk together vinegar, oil, mustard seeds, onion sugar and parsley. In a salad bowl place the washed and dried spinach, toss in drressing then bacon. Garnish with the egg, sliced in rounds.
To serve this warm, substitute the olive oil with 2 tablespoons of the bacon drippings, add all of the dressing ingredients to the pan and just before the dressing boils, pour it over the spinach greens. Toss in bacon and garnish with egg. Serves 4.
